Graham Cracker Crust 8 oz. graham cracker crumbs and 5 oz. melted butter. Mix ingredients until combined and press into 9” pie plate or 4” mini pie plates. Chocolate Chess Filling 8 oz. butter 2 oz. cocoa paste (unsweetened baking chocolate) 15 oz. sugar 1/4 tsp. salt 2 whole eggs, lightly beaten 1/2 tsp. vanilla extract Melt chocolate and butter together over low heat. Whisk in sugar and salt. Whisk in eggs and vanilla. Pour into prepared crust and bake 45-50 minutes at 350 or until center barely moves when jiggled. Italian Meringue 3 oz. sugar 0.5 oz. corn syrup 1.5 oz. egg whites pinch salt 0.8 oz. water In a small saucepan, cook sugar, corn syrup, and water to 121 degrees C. Meanwhile, begin whipping the egg whites and salt in the stand mixer until eggs are completely foamy. When the sugar mixture reaches 121 degrees C, turn the mixer to the highest setting and very carefully pour the sugar mixture into the eggs, down the side of the bowl, NOT OVER THE WHISK. When all of the sugar mixture is incorporated, whip until stiff peaks form. Spoon into piping bag to pipe onto cooled pie, or spread with a spatula or spoon.
